Chia pudding is an extremely easy and healthy dessert or snack to make that satisfies sweet cravings. The base of it requires only two ingredients – chia seeds and almond milk (or some other liquid) in a ratio of approximately 1:3. Chia seeds are superfoods filled with nutrients and antioxidants including fiber and protein. As you refrigerate the ingredients overnight, the chia seeds absorb the liquid to create a gelatinous, pudding-like consistency and texture comparable to tapioca pudding.
- Chia seeds
- Almond milk (or milk/juice of choice)
- Liquid sweetener of choice (maple syrup, brown rice syrup, agave, honey, etc.)
- Fruits if wanted
- Other flavoring ingredients and toppings if wanted (matcha powder, cacao powder, vanilla extract, etc.)
In a mason jar/container, put in about one part chia seeds to three parts liquid. Add in liquid sweetener and other flavoring ingredients as desired. Refrigerate for at least three hours (best overnight). Add desired toppings. Enjoy!
